The ribeye roast is a piece of meat known for being tender and juicy. With its layer of fat and high marbling, they will melt with heat, adding flavour and juiciness to your roast while tenderizing it. It is suggested to roast it in the oven at 325°F or if you have more time, at 275°F. The roast will be very juicy, as long as you don't exceed the internal temperature of 160°F (71°C), which is equivalent to a "medium". (Internal temperature for medium-rare: 63°C or 145°F.) Make sure to cover your roast with aluminum foil and to let it rest for about 20 minutes after cooking. This last step will make all the difference.
