Slice some fresh tomatoes and spread the slices out on a large plate. Slice some fresh mozzarella and add it on top of the tomatoes. Drizzle some olive oil and balsamic vinegar on top. Slice a ciabatta roll lengthwise and spread a bit of olive oil and balsamic vinegar on each half. Then top with fresh basil and slices of fresh tomato and mozzarella. For even more flavour, add some pesto.

Pre-heat the oven to 350 °F. Drizzle some olive oil on thin slices of baguette then bake until the bread is slightly golden. In a bowl, combine small cubes of freshly cut tomatoes, shallots, minced garlic, basil, as well as salt and pepper. Use a spoon to spread this mixture on top of the slices of bread. Add a bit of chopped parsley and parmesan then drizzle some balsamic vinegar on top.
