Yield: Makes 2 sandwiches

- 4 slices of bread
- 4 slices of Selection Cheddar cheese
- 1 firm but ripe Bartlett, Anjou, or Bosc USA Pear, peeled, halved lengthwise, cored and cut into 4 thick slices
- 4 slices cooked bacon
- 2 tablespoons butter, softened
- Place 2 slices of bread on a work surface and top each slice with a piece of the cheese. Add 2 slices of pear and 2 slices of bacon on top of each piece of cheese. Place a slice of bread on top and butter the top slices of bread with half of the butter.
- Preheat a griddle or large skillet. Place the sandwiches buttered side down on the hot griddle or pan. Butter the topside of the sandwiches. Grill until nicely browned on both side. Cut each sandwich and serve.
Smoky Paprika Sheet-Pan Chicken with Pears, Potatoes, And Carrots

It’s also the perfect opportunity to combine pears with those loose vegetables sitting in your fridge. As they roast, the chicken skin becomes crisp, and the pears release fragrant juices that mix with the spices and olive oil to create a delicious sauce right in the pan.
Yield: Serves 4 to 6

- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 2 teaspoons garlic powder
- Salt & pepper
- 5 to 6 ripe or slightly underripe USA Bosc, Concorde, Forelle, or Seckel Pears
- 1 pound small potatoes in a variety of colors, halved
- 3 carrots, peeled, halved, and cut
- 2 tablespoons Selection extra-virgin olive oil
- 6 bone-in, skin-on chicken thighs, patted dry with paper towe
- ¼ cup coarsely chopped fresh cilantro
- Sour cream, for serving
- Preheat the oven to 425˚F
- In a small bowl, mix the spice.
- Halve and core the pears.
- On a baking sheet, combine the pear wedges, potatoes, and carrots. Drizzle with olive oil, sprinkle with about one-third of the spice mixture, and toss to coat everything. Spread the pears and vegetables out in an even layer. Repeat with the chicken. Sprinkle both sides with the remaining spice mixture to coat well. Place the chicken thighs over the pears and vegetables, spacing them out evenly.
- Place the sheet pan in the bottom of the oven and roast for 40 to 50 minutes.
- Transfer the chicken thighs to a platter and tent with foil to keep warm. Switch the oven to broil. Broil the pears and vegetables for about 5 minutes.
- Divide the pears and vegetables among plates, along with some of the accumulated juices on the pan. Top with the chicken. Sprinkle with the cilantro and a dollop of sour cream, and serve.
Pear pizza with Brie cheese and rosemary
Here is a meal idea that perfectly combines the sweetness of pear to the saltness of cheese. This pizza will be loved by all the members of your family !
Cooking time: 60 minutes • Difficulty: Low • Yield: 4 servings

- 1 pizza dough
- 4 tomatoes, cut in four pieces
- 2 garlic cloves
- 1 cup basil leaves
- ¼ cup olive oil
- 2 Anjou pears, thinly sliced
- ½ piece Selection Brie cheese, sliced
- 2 rosemary branches, the leaves
- Salt and pepper
- Mix the tomatoes, garlic, basil and olive oil; place them in an oven-proof pan and bake them at 400°F for 30 minutes; blend and season with salt and pepper.
- Stretch the pizza dough and make 1 large or 2 small pizzas; spread tomato sauce and add pear slices, cheese and rosemary. Bake them at 430°F for 8 minutes, or until they are golden brown.

For Turkey Burgers
- 1 pound ground turkey
- ½ cup Selection Italian-seasoned breadcrumbs
- 1 large egg, beaten
- 1 tablespoon minced dried onion
- 1 teaspoon Worcestershire sauce
- Salt and pepper
Assembly
- 12 small slider buns
- 1-2 Bartlett or Anjou pears sliced
- ¾ cup Selection goat cheese
- Arugula lettuce
To make Turkey Burgers
- Combine all ingredients in large bowl.
- Shape into 12 patties.
- Pan-fry, broil, or grill until turkey burgers lightly browned and cooked through, about 5 minutes per side.
To make Pear Slices
- Cut pears into small slices and spray lightly with nonstick spray.
- 2. Grill or broil pear slices until brown in spots, about 2 minutes per side.
To Assemble
- Spread bottom half with goat cheese.
- Put cooked turkey burger and a pear slice on top of goat cheese and top with fresh arugula leaves and serve.
