It's snow crab season! Every spring, fishermen head to the St. Lawrence Estuary and throw their cages in the water so we can enjoy this delicious shellfish. Much finer and more delicate than lobster meat, snow crab meat is low in fat and calories and is an excellent source of lean protein. It is also rich in zinc, an element that promotes fetal development. To cook it, simply plunge your crab into boiling salt water. As soon as it boils again, allow 10 to 14 minutes before taking it out. We suggest not to put your cooked crab under cold water to cool it down so that it keeps its salty taste. Guidance: the weight of edible meat is about one quarter of the weight of the whole crab. Pro tip: keep your shells and make a bisque with a crab base.
