The striploin roast is known to be flavourful and tender, even though it has denser fibers. It is cut in such a way as to have a fat cap on top. This is what will give your roast more flavour and juiciness as some of the fat will melt with the heat, thus tenderizing the roast. It is suggested to roast it in the oven at 325°F or if you have more time, at 275°F. The roast will be very juicy, as long as you don't exceed the internal temperature of 160°F (71°C), which is equivalent to a "medium". (Internal temperature for medium-rare: 63°C or 145°F.) Make sure to cover your roast with aluminum foil and to let it rest for about 20 minutes after cooking. This last step will make all the difference.
