The whole filet mignon is a noble piece of meat that can be roasted or cut into steaks. Appreciated for its tenderness, this very lean piece of meat also offers a unique taste. However, because it is less marbled, it makes it a little less flavourful than other steaks. It is therefore recommended to cook the filet mignon rare or medium-rare to appreciate it to its true value. If it is cooked longer, the piece will dry out and lose all its finesse. It is recommended to place the whole filet mignon at room temperature for half an hour before cooking. To make your steaks even better, let the slices rest in aluminum foil a few minutes after cooking.
