A little hidden treasure, this Brazilian cut is becoming increasingly popular among barbecue enthusiasts. Brazilians do not cut their meat quite like us which is why we are not used to this peculiar piece of meat. The picanha is so tasty that it hardly requires any preparation. Completely covered with a layer of soft fat, just season it with coarse salt and it is done. As the fat melts, it will add flavour to the meat. Try to season your steak at least 15 minutes before cooking so the salt is well absorbed. Enhance your steak: cover it with foil and let it sit for a couple of minutes after cooking.
