The famous filet mignon! Appreciated for its tenderness, this very lean piece of meat also offers a unique taste. However, because it is less marbled, it makes it a little less flavourful than other steaks. It is therefore recommended to cook your filet mignon rare or medium-rare to appreciate it to its true value. If it is cooked longer, the steak will dry out and lose all its finesse. Place your steak at room temperature for half an hour before cooking. To make your steak even better, let it rest in aluminum foil for a few minutes after cooking.
