Stuffed potatoes

Choosing the right potato
Best for oven baking and mashing, Russet potatoes are perfect for this type of meal. Its skin is thick and can easily become crispy, while its flesh creates a smooth texture without lumps. To make a delicious stuffed potato, you will need large Russet potatoes individually wrapped in aluminum foil to then grill on the barbecue.

Choosing the topping
Take a little bit of garlic, crumbled firm tofu and onions and cook down in a frying pan with the seasoning of your choice (salt, pepper, cumin, dill, etc.). Empty out a part of the cooked potato flesh all while keeping the skin intact, and mix the flesh with sour cream and the seasoned tofu mix. Don't be scared to improvise the toppings and use what you already have in your fridge.
Assembling like a pro
All that's left to do is stuff the potato with the prepared mix. For even more flavour, sprinkle some parmesan or shredded cheddar on top before enjoying!
Bonus: For different flavours, you can use sweet potatoes instead of traditional ones.

Squash en papillote
If you're grilling up a main dish, stuffed squash is a real crowd pleaser. Several types of squash (butternut, spaghetti, etc.) work for this meal, so don't hesitate to choose the one that's on sale. Start by slicing the squash in half and removing all seeds. Fill the two halves with the stuffing of your choice. Wrap the stuffed squash in aluminum paper and place on the grill. Cook for about twenty minutes, until you can easily pierce a knife through the flesh. At the very end, you can add a little kick to it by making the squash au gratin, which is adding some shredded cheese on top and quickly broiling it!
